Chicken Marsala Pasta

A delightful combination of tender chicken, earthy mushrooms, and creamy sauce over perfectly cooked pasta, making it a comforting yet elegant family favorite.

  • 8 oz. pasta (fettuccine or penne)
  • 2 tablespoons olive oil
  • 1 lb. boneless, skinless chicken breasts, sliced
  • 1 cup mushrooms, sliced (preferably cremini or button)
  • 2 cloves garlic, minced
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain and set aside.
  2. Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once shimmering, carefully add the sliced chicken breasts. Season with salt and pepper. Cook for about 5-6 minutes per side, or until golden brown and cooked through.
  3. Add the Garlic and Mushrooms: Remove the cooked chicken from the skillet and set it aside. In the same skillet, add the mushrooms and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.
  4. Pour in the Marsala Wine: Carefully pour in the Marsala wine, scraping up any tasty brown bits stuck to the bottom of the skillet. Allow the wine to simmer for about 2-3 minutes until slightly reduced.
  5. Create the Sauce: Stir in the chicken broth and Italian seasoning, then let it simmer for another 5 minutes. Once the sauce has slightly thickened, add the heavy cream.
  6. Combine and Toss: Add the cooked chicken back into the skillet, along with the drained pasta. Toss everything together in the creamy sauce. Use some of the reserved pasta water if the sauce seems too thick.
  7. Serve It Up: Remove from heat and sprinkle with chopped parsley and grated Parmesan if using. Serve warm and enjoy!

Notes

Feel free to experiment with vegetables or different pasta types. Nutritional yeast can be used as a dairy-free substitute for Parmesan.
