Chicken Rice Soup

A cozy and comforting Chicken Rice Soup, perfect for chilly nights or when feeling under the weather.

Ingredients

  • 1 whole chicken or 23 lbs of chicken thighs/breasts
  • 1 cup long-grain white or brown rice
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • Fresh thyme or parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Prep Your Ingredients: Chop your veggies and shred your chicken if using cooked chicken.
  2. Sauté Your Aromatics: Heat olive oil in a large pot over medium heat, add onion, carrots, and celery, and cook for 5-7 minutes.
  3. Add Garlic: Toss in minced garlic and sauté for an additional minute.
  4. Add Chicken and Broth: Pour in chicken broth, add chicken pieces, and bring to a boil. Reduce heat, cover, and simmer for 20 minutes.
  5. Cook the Rice: Add rice to the pot and cook according to your rice type (15-20 minutes for uncooked, just warm through for cooked).
  6. Finishing Touches: Shred chicken if required, stir back into the pot, and season with salt, pepper, and herbs.
  7. Serve It Up: Ladle soup into bowls, garnish with herbs or olive oil, and enjoy!

Notes

If the soup is too thick, add more broth or water to reach desired consistency. Adjust seasoning as required.
