Delightful Chicken Salad

A vibrant and refreshing chicken salad filled with crunchy vegetables and fresh herbs, perfect for springtime!

Ingredients

  • 2 cups cooked and shredded chicken breast
  • 1 cup celery, diced
  • 1 cup red grapes, halved
  • 1/2 cup red onion, finely chopped
  • 1 cup Greek yogurt (or mayo for a traditional twist)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs (like parsley or dill), for garnish

Instructions

  1. Prepare your chicken by poaching it until cooked through, then shred with two forks.
  2. Chop the celery, halve the grapes, and finely chop the red onion.
  3. Mix the dressing by whisking together the Greek yogurt, Dijon mustard, honey, and lemon juice.
  4. Combine everything by tossing the shredded chicken and chopped veggies into the dressing mixture.
  5. Taste the salad and adjust seasoning as needed.
  6. Chill in the fridge for at least 30 minutes to meld the flavors.

Notes

This salad can be made ahead of time and keeps well in the refrigerator for up to three days.
