Chickpea Feta Avocado Salad

A vibrant and nutritious salad featuring chickpeas, creamy avocado, and tangy feta, perfect for any occasion.

  • 1 (15-ounce/425g) can chickpeas, drained and rinsed
  • 1 avocado, pitted and diced
  • 4 ounces/115g feta cheese, crumbled
  • 1/2 cup/75g red onion, thinly sliced
  • 1/2 cup/50g fresh parsley, chopped
  • 1/4 cup/25g fresh mint, chopped
  • 3 tablespoons/45ml olive oil
  • 2 tablespoons/30ml lemon juice, freshly squeezed
  • 1 clove garlic, minced
  • 1/2 teaspoon/2.5ml dried oregano
  • Salt and pepper to taste

Instructions

  1. Prep the chickpeas by draining and rinsing them, then drying well with a paper towel.
  2. Chop the avocado, parsley, mint, and red onion, admiring the vibrant colors.
  3. Mix the dressing by whisking together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper in a small bowl.
  4. Combine ingredients in a large bowl, gently tossing together the chickpeas, avocado, feta, parsley, mint, and red onion.
  5. Drizzle the dressing over the salad and gently toss to combine.
  6. Taste the salad and adjust seasoning if necessary.
  7. Chill in the fridge for 15-30 minutes if desired before serving.

Notes

This salad can be customized with additional veggies or proteins. It’s best enjoyed fresh, but can be made ahead without avocado and dressing.
