  • 1/4 cup fresh squeezed lime juice (juice of 2 limes)
  • 1 Tablespoon lime zest (zest of 1 lime)
  • 2 teaspoons minced garlic (about 2 cloves)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper

Instructions

  1. Prep the Marinade: In a bowl, whisk together the olive oil, lime juice, lime zest, garlic, chili powder, cumin, smoked paprika, salt, and pepper.
  2. Marinate the Chicken: Place your chicken in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring every piece is coated well.
  3. Preheat Your Grill or Oven: Heat your grill to medium-high or preheat your oven to 400°F (200°C).
  4. Cook the Chicken: Grill for about 6-8 minutes on each side or bake for about 25-30 minutes, until internal temperature reaches 165°F (75°C).
  5. Baste for Extra Flavor: Brush the reserved marinade onto the chicken during the last few minutes of grilling.
  6. Rest the Chicken: Let it rest for about 5-10 minutes before serving.
