Refreshing Coconut Mango Popsicles

Cool down this summer with refreshing Coconut Mango Popsicles made with creamy coconut milk and sweet mango.

Ingredients

  • 2 cups frozen mango
  • 1 (14 oz.) can full-fat coconut milk, cream only
  • 1/2 cup almond milk
  • 1/4 cup honey
  • 1 Tbsp lime juice
  • 1 tsp vanilla
  • 1 Tbsp cornstarch (optional)
  • Shredded coconut (optional)

Instructions

  1. Blend the frozen mango, coconut cream, almond milk, honey, lime juice, vanilla extract, and cornstarch (if using) until smooth and creamy.
  2. Taste your mixture and adjust sweetness with more honey or lime juice if desired.
  3. Prepare your popsicle molds and ensure they are clean.
  4. Fill the molds evenly with the blended mixture and leave a little room at the top.
  5. Insert sticks after filling molds or freeze for 1 hour before inserting in paper cups.
  6. Freeze for at least 4-6 hours or until solid.
  7. Remove popsicles by running warm water over the outside of the mold.
  8. Enjoy your delicious popsicles and store any leftovers in a zip-top bag.

Notes

For extra texture, mix in shredded coconut or layer with blended berries before freezing.
