Coconut Curry

A flavorful and easy Coconut Curry packed with coconut milk, spices, and nutritious vegetables.

Ingredients

  • 2 tablespoons coconut oil
  • 1 diced onion
  • 3 minced garlic cloves
  • 1 inch piece of grated ginger
  • 1 diced red bell pepper
  • 1 diced green bell pepper
  • 1 can (13.5 oz) coconut milk
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons curry powder
  • 2 cups fresh spinach
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat the coconut oil in a large pot over medium heat.
  2. Add the diced onion, garlic, and ginger, sauté for about 5 minutes.
  3. Stir in the diced bell peppers and cook for another 3-4 minutes.
  4. Sprinkle in the curry powder and stir until vegetables are coated.
  5. Pour in the coconut milk and stir well to combine.
  6. Add chickpeas and let it simmer for 10 minutes, stirring occasionally.
  7. Fold in the spinach and let it wilt for about 1-2 minutes.
  8. Taste and adjust seasoning with salt and pepper.
  9. Remove from heat and serve hot.

Notes

Feel free to substitute chickpeas with chicken, shrimp, or tofu for a different protein option.
