Creamy Corn Chowder

A warm and comforting corn chowder, perfect for cozy nights in and gatherings with friends.

  • 4 cups Fresh Corn
  • 2 medium Potatoes, diced
  • 4 slices Bacon
  • 1 cup Heavy Cream
  • 4 cups Vegetable or Chicken Broth
  • 1 medium Onion, diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Thyme, dried
  • Salt and Pepper to taste

Instructions

  1. Cook the bacon: Heat a large soup pot over medium heat. Add the bacon slices and cook until crispy, about 5-7 minutes. Remove and let drain on paper towels, leaving 2 tablespoons of bacon fat in the pot.
  2. Sauté the aromatics: Add the diced onion and sauté for 4-5 minutes until translucent, then add minced garlic and sauté for an additional minute.
  3. Add the potatoes: Toss in the diced potatoes and stir to coat in the bacon fat. Sauté for another 2 minutes.
  4. Pour in the broth: Add the vegetable or chicken broth and bring to a gentle boil. Reduce to a simmer and cook until potatoes are tender, about 10-15 minutes.
  5. Incorporate the corn: Add fresh or frozen corn and continue to simmer for another 5 minutes.
  6. Blend for creaminess: Carefully blend chowder until smooth or partially smooth for a chunkier texture.
  7. Stir in the cream: Lower the heat and stir in the heavy cream, crumbled bacon, thyme, and season to taste. Simmer for a few more minutes.
  8. Final touches: Taste and adjust seasoning if necessary before serving.

Notes

Can be modified for a lighter version by using half-and-half or coconut milk. Add a pinch of cayenne for some heat.
