Ultimate Corn Nuggets

  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon baking powder

  • 1 teaspoon paprika
  • Salt (to taste)
  • Pepper (to taste)
  • 1/4 cup milk
  • Oil (for frying)

Instructions

  1. Mix the wet ingredients: In a mixing bowl, whisk together the two eggs and 1/4 cup of milk until frothy.
  2. Combine the dry ingredients: In a separate bowl, stir together the flour, cornmeal, baking powder, garlic powder, paprika, salt, and pepper.
  3. Merge the mixtures: Gradually add the dry ingredients to the wet mixture, folding gently to blend.
  4. Add in the corn and cheese: Gently fold in the sweet corn kernels and grated Parmesan cheese.
  5. Heat the oil: In a large frying pan, heat about an inch of oil over medium-high heat.
  6. Fry the nuggets: Using a spoon or small ice cream scoop, drop spoonfuls of the batter into the hot oil and fry for about 3-4 minutes on each side.
  7. Drain and cool: Transfer them to a plate lined with paper towels to absorb any excess oil.
