Cowboy Butter Steak & Broccoli Linguine

A flavorful dish featuring perfectly cooked steak, vibrant broccoli, and al dente linguine coated in a rich garlic butter sauce.

  • 1 lb sirloin or ribeye steak, cut into bite-sized cubes
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp black pepper
  • Salt, to taste
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 4 cloves garlic, minced
  • ½ tsp crushed red pepper flakes (optional)
  • 1 tsp Dijon mustard
  • Juice of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 12 oz linguine
  • 3 cups broccoli florets
  • ½ cup reserved pasta water
  • ½ cup grated Parmesan cheese (plus extra for serving)

Instructions

  1. Cook your pasta by bringing a large pot of salted water to a boil, adding the linguine, and cooking until al dente.
  2. Sauté the broccoli in a skillet with olive oil and a pinch of salt for about 5-7 minutes.
  3. Cook the steak in the same skillet, adding spices and searing for 3-4 minutes until browned.
  4. Prepare the Cowboy Butter sauce by adding butter, minced garlic, red pepper flakes, and mustard to the skillet.
  5. Combine the cooked linguine and sautéed broccoli with the sauce, adding reserved pasta water as needed.
  6. Final touches include sprinkling fresh parsley and chives and adjusting seasoning.

Notes

Feel free to substitute steak with shrimp or chicken and adjust veggies to your preference.
