Crack Potatoes

Crispy potatoes loaded with Ranch seasoning, gooey cheese, crumbled bacon, and fresh green onions, perfect for gatherings and comfort food cravings.

  • 2 pounds potatoes (Russet or Yukon Gold)
  • 1 packet Ranch seasoning mix
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup cooked and crumbled bacon
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the potatoes, then cut them into bite-sized cubes.
  3. Simmer the cubed potatoes in salted water for about 10-15 minutes until tender.
  4. Drain the potatoes and let them sit to steam off excess moisture.
  5. Combine the boiled potatoes with Ranch seasoning, shredded cheese, crumbled bacon, and sour cream in a large mixing bowl.
  6. Season with salt and pepper to taste, then spread the mixture in a greased 9×13-inch baking dish.
  7. Bake for about 20-25 minutes until the top is golden and bubbling.
  8. Sprinkle chopped green onions on top after baking.
