Creamy White Chicken Chili

  • 1 lb shredded rotisserie chicken or cooked chicken breast
  • 2 cans (15 oz each) great northern or cannellini beans, drained
  • 1 can (4 oz) diced green chiles or poblano peppers
  • 1 yellow or white onion, diced
  • 3 cloves fresh garlic, minced
  • 4 cups chicken broth (low-sodium)
  • 1 tsp cumin
  • 1 tsp oregano
  • 8 oz cream cheese (or Greek yogurt/sour cream)
  • Juice of 1 lime
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Sauté the onion in a large pot with olive oil over medium heat for 3-4 minutes until translucent. Add garlic and sauté for another minute.
  2. Cook the chicken by adding it to the pot if raw, seasoning and browning for about 5 minutes per side. Remove and shred once cooled.
  3. Incorporate the chicken broth and bring to a simmer. Stir in the beans and green chiles.
  4. Season with cumin, oregano, and salt to taste.
  5. Add the cream cheese, stirring until melted for a silky texture.
  6. Stir in the shredded chicken and simmer for another 10 minutes before serving.
  7. Finish with a squeeze of lime juice.
