Broccoli Cheddar Soup

A creamy and dreamy Broccoli Cheddar Soup that’s perfect for chilly nights and packed with comforting flavors.

Ingredients

  • Broccoli florets (4 cups)
  • Carrots (1 cup, diced)
  • Onion (1 medium, diced)
  • Garlic (3 cloves, minced)
  • Butter (3 tablespoons)
  • All-purpose flour (1/4 cup)
  • Vegetable broth (4 cups)
  • Heavy cream (1 cup)
  • Shredded cheddar cheese (2 cups)
  • Salt and pepper (to taste)
  • Crushed red pepper flakes (optional)

Instructions

  1. Sauté the vegetables: In a large pot, melt the butter over medium heat. Add the diced onion and carrots, sautéing for about 5-7 minutes until softened. Add the minced garlic and cook for about 1 more minute until fragrant.
  2. Sprinkle the flour over the sautéed veggies. Stir continuously for about 2 minutes.
  3. Gradually add the vegetable broth while stirring. Bring the soup to a simmer.
  4. Add the broccoli florets and let the soup cook for about 10 minutes until tender.
  5. Stir in the heavy cream and shredded cheddar cheese until melted and well combined.
  6. Blend the soup using an immersion blender or in batches for a creamier texture, if desired.
  7. Ladle the soup into bowls, garnishing as preferred.

Notes

For a lighter version, consider using half-and-half or almond milk instead of heavy cream. Feel free to experiment with different cheeses and herbs.
