Cozy Butternut Squash Soup

A heartwarming butternut squash soup that nourishes the body and warms the soul, perfect for chilly days.

  • 1 large Butternut Squash, peeled and diced
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 medium Carrots, diced
  • 4 cups Vegetable Broth
  • 1 can Coconut Milk
  • 2 tablespoons Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Nutmeg
  • Salt and pepper to taste
  • Fresh Herbs for garnish (optional)

Instructions

  1. Prep the Butternut Squash: Start by peeling the butternut squash. Cut it in half and scoop out the seeds, then dice it into roughly 1-inch cubes.
  2. Sauté the Aromatics: In a large pot, heat olive oil over medium heat, then add the chopped onion and garlic. Sauté for about 5 minutes until they are translucent and fragrant.
  3. Add the Veggies: Toss in the diced butternut squash and carrots. Stir together and sauté for an additional 5-7 minutes.
  4. Pour in the Broth: Add the vegetable broth, bring to a boil, then lower the heat and let it simmer for about 20 minutes until the squash and carrots are tender.
  5. Blend it Up: Use an immersion blender to blend the soup until smooth, adding the coconut milk during blending.
  6. Season to Perfection: Return the soup to the pot, adjust the seasoning with cumin, nutmeg, salt, and pepper, and simmer for an additional 5 minutes.
  7. Serve it Up: Ladle into bowls, drizzle with olive oil or coconut milk, and sprinkle fresh herbs on top.

Notes

This soup can be frozen for later and tastes even better after sitting for a while. Adjust the consistency with more broth or water if it thickens.
