Ingredients
Scale
1 pound Carrots, peeled and chopped
1 tablespoon Fresh ginger, peeled and grated
1 medium Onion, finely chopped
2 cloves Garlic, minced
4 cups Vegetable broth
1 cup Heavy cream
2 tablespoons Olive oil
Salt & Pepper, to taste
Instructions
Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté for about 4-5 minutes until they become translucent.
Add garlic and ginger: Once the onions are ready, add the minced garlic and grated ginger. Cook for an additional 2 minutes, stirring constantly.
Toss in the chopped carrots. Stir them around for about 3 minutes.
Add your vegetable broth and stir everything together. Bring the mixture to a simmer. Let it cook uncovered for about 20 minutes, or until the carrots are tender.
Blend the soup right in the pot until smooth and creamy.
Return the soup to low heat and stir in the heavy cream. Season with salt and pepper to taste. Let it warm through for another 5 minutes.
Notes
For a lighter version, substitute heavy cream with coconut milk. You can freeze the soup for later enjoyment.
