Creamy Cauliflower Soup

A comforting creamy cauliflower soup that warms you from the inside out, perfect for chilly days.

Ingredients

  • 1 large head of cauliflower
  • 1 medium onion
  • 23 cloves of garlic
  • 2 cups of vegetable or chicken broth
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Optional toppings: fresh herbs, croutons, olive oil

Instructions

  1. Prep your ingredients: Wash the cauliflower and cut it into florets. Chop the onion and mince the garlic.
  2. Sauté the aromatics: In a large pot, add olive oil and heat over medium. Add the onion and cook until translucent, then add the garlic.
  3. Cook the cauliflower: Add the cauliflower florets and broth, bring to a boil, then reduce heat and simmer for 15-20 minutes.
  4. Blend until smooth: Puree the soup with an immersion blender, then stir in the cream and season to taste.
  5. Serve it up: Ladle the soup into bowls and top with olive oil, fresh herbs, or croutons.

Notes

For a cheesier version, stir in grated cheese before blending. You can also make it vegan by using coconut milk instead of cream.
