Creamy Cherry Overnight Oats with Almond Butter

  • 1 cup rolled oats
  • 1 cup milk (any kind)
  • ½ cup Greek yogurt
  • 1 cup cherries (fresh or frozen)
  • 3 tablespoons almond butter
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons chia seeds

Instructions

  1. Combine 1 cup of rolled oats, 1 cup of milk, and ½ cup of Greek yogurt in a mixing bowl and stir gently.
  2. Add 2 tablespoons of honey (or maple syrup) and 1 teaspoon of vanilla extract, whisking again to mix.
  3. Fold in 1 cup of pitted cherries and 2 tablespoons of chia seeds.
  4. Toss in 3 tablespoons of almond butter and mix until combined.
  5. Divide the mixture into jars, leaving space at the top.
  6. Cover and refrigerate overnight for 6-8 hours.
  7. Serve chilled, garnished with extra cherries and almond butter.
