Creamy Chicken Soup: A Hug in a Bowl

  • 1 lb Boneless Chicken Breasts or Thighs
  • 2 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Carrots, sliced
  • 2 stalks Celery, diced
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp Thyme

Instructions

  1. Sauté the aromatics: In a large pot, heat about two tablespoons of olive oil over medium heat. Toss in the chopped onion and cook until it turns translucent, about 3-5 minutes. Add the minced garlic, and sauté for another minute until fragrant.
  2. Add the veggies: Include the sliced carrots and celery, cooking for another 5 minutes until they start to soften.
  3. Add the chicken: Dice it into bite-sized pieces and toss it into the pot, stirring for a couple of minutes until it starts to brown slightly.
  4. Pour in the broth: Add the chicken broth, scraping the bottom of the pot to release any browned bits. Bring to a gentle simmer and cover the pot, cooking for about 10-15 minutes.
  5. Stir in the cream: Reduce heat to low, add the heavy cream, and stir slowly until incorporated.
  6. Season and serve: Sprinkle in salt, pepper, and thyme. Taste and adjust seasoning as needed.

Notes

Garnish with fresh herbs or croutons for added texture. Serve with crusty bread.
