1 lb Boneless Chicken Breasts or Thighs
2 tbsp Olive Oil
1 Onion, chopped
2 cloves Garlic, minced
2 Carrots, sliced
2 stalks Celery, diced
4 cups Chicken Broth
1 cup Heavy Cream
Salt, to taste
Pepper, to taste
1 tsp Thyme
Instructions
Sauté the aromatics: In a large pot, heat about two tablespoons of olive oil over medium heat. Toss in the chopped onion and cook until it turns translucent, about 3-5 minutes. Add the minced garlic, and sauté for another minute until fragrant.
Add the veggies: Include the sliced carrots and celery, cooking for another 5 minutes until they start to soften.
Add the chicken: Dice it into bite-sized pieces and toss it into the pot, stirring for a couple of minutes until it starts to brown slightly.
Pour in the broth: Add the chicken broth, scraping the bottom of the pot to release any browned bits. Bring to a gentle simmer and cover the pot, cooking for about 10-15 minutes.
Stir in the cream: Reduce heat to low, add the heavy cream, and stir slowly until incorporated.
Season and serve: Sprinkle in salt, pepper, and thyme. Taste and adjust seasoning as needed.
Notes
Garnish with fresh herbs or croutons for added texture. Serve with crusty bread.
