Creamy Garlic Sauce Baby Potatoes

Delicious roasted baby potatoes enveloped in a rich and creamy garlic sauce, perfect as a side or a main star of the meal.

  • 1 pound baby potatoes
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the baby potatoes under cold water and pat them dry, then slice them in half.
  3. Combine the sliced potatoes with olive oil, salt, and pepper in a large bowl.
  4. Spread the potatoes on a baking sheet in a single layer and bake for about 25-30 minutes, flipping halfway through, until golden brown and fork-tender.
  5. Heat a medium saucepan over medium heat, adding olive oil and minced garlic, sautéing for 1-2 minutes until fragrant.
  6. Pour in the heavy cream and let it simmer gently for about 3-5 minutes, stirring continuously.
  7. Add the grated Parmesan cheese, stirring until melted and the sauce is smooth.
  8. Remove the roasted potatoes from the oven and toss them in the creamy garlic sauce until well-coated.
  9. Garnish with freshly chopped parsley and serve.

Notes

For a lighter version, you can substitute the heavy cream with half-and-half or whole milk. Add fresh herbs or a squeeze of lemon juice for extra flavor.
