Creamy Herb Chicken

  • 4 boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound potatoes, diced
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the potatoes by tossing them in a bowl with olive oil, salt, and pepper, then spread them on a baking sheet.
  3. Roast the potatoes for about 25-30 minutes or until golden and crisp, shaking halfway through.
  4. Sear the chicken in a skillet with olive oil and butter on medium-high heat for 5-7 minutes on each side until golden brown.
  5. Sauté the garlic, thyme, and rosemary in the same skillet for about 30 seconds until fragrant.
  6. Create the creamy sauce by adding the heavy cream and stirring to combine, letting it simmer for about 5 minutes.
  7. Return the seared chicken to the skillet, spooning the creamy sauce over it for another 2-3 minutes.
  8. Finishing touches: sprinkle fresh parsley on top before serving.
