Creamy Italian Cucumber Salad

A refreshing twist on a classic dish combining creamy dressing with crunchy cucumbers and zesty onions.

  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon red or white wine vinegar
  • 2 teaspoons Italian seasoning
  • 1 teaspoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pinch granulated sugar (about 1/8 teaspoon)
  • 3 large cucumbers
  • 1 medium red onion

Instructions

  1. Prepare the cucumbers: Wash thoroughly, peel if desired, and slice thinly.
  2. Chop the onion: Peel and slice the red onion thinly.
  3. Make the dressing: Combine mayonnaise, sour cream, vinegar, olive oil, garlic, salt, pepper, and sugar in a bowl. Whisk until blended.
  4. Combine the veggies: In a large bowl, mix cucumbers and onions, then add dressing and toss gently.
  5. Chill: Refrigerate for at least 30 minutes before serving.
  6. Final toss and serve: Right before serving, toss again and adjust the consistency if needed.

Notes

Serve with grilled meats or as a part of a picnic spread. Can be made a day ahead, but add cucumbers close to serving time to prevent excess water.
