Creamy Italian Sausage Rigatoni

  • 1 pound Italian sausage
  • 1 can (14.5 ounces) canned tomatoes

  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the rigatoni and cook according to package instructions, about 10-12 minutes, until al dente. Reserve 1 cup of pasta water before draining.
  2. Sauté the Aromatics: In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes. Add minced garlic and sauté for another minute.
  3. Cook the Sausage: Add Italian sausage, breaking it up as it cooks until browned, about 7-10 minutes. Drain excess fat if necessary, but keep some for flavor.
  4. Add the Tomatoes and Spices: Pour in the canned tomatoes and juices, adding red chili flakes, salt, and pepper. Simmer for 5 minutes.
  5. Incorporate the Cream: Lower the heat and stir in heavy cream, adjusting with reserved pasta water if too thick.
  6. Combine with Pasta: Toss cooked rigatoni with the sauce and fold in grated Parmesan, stirring over low heat for 1-2 minutes.
  7. Final Touches: Remove from heat and garnish with olive oil, Parmesan, and fresh basil.

Notes

For a lighter dish, substitute heavy cream with half-and-half or coconut cream. Serve with a light salad and a glass of red wine.
