Creamy Jalapeño Popper Soup

A creamy and comforting soup that captures the flavors of jalapeño poppers, perfect for any day of the week.

Ingredients

Scale
  • 1 lb chicken (boneless, skinless breasts or thighs)
  • 45 fresh jalapeños (adjust to your spice preference)
  • 8 oz cream cheese (softened)
  • 1 cup crumbled bacon (about 8 slices, cooked and crispy)
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped green onions (for garnish)

Instructions

  1. Prepare your ingredients: Dice the chicken, chop the jalapeños, and cook the bacon. Set aside to drain excess grease.
  2. Cook the chicken in a large pot over medium heat with olive oil, seasoning with salt and pepper, until golden brown (5-7 minutes). Remove and set aside.
  3. Sauté the jalapeños in the same pot until slightly softened (3-4 minutes).
  4. Add softened cream cheese and stir until melted, then pour in the chicken broth and bring to a gentle simmer.
  5. Mix in the cooked chicken, crispy bacon, and shredded cheese, adjusting seasoning to taste.
  6. Simmer for another 5-10 minutes on low heat to meld flavors.
  7. Serve in warm bowls, garnishing with green onions, extra cheese, or sour cream.

Notes

For a vegetarian option, swap chicken with chickpeas. Adjust jalapeños for desired spice level.
