Loaded Baked Potato Soup

A creamy and hearty Loaded Baked Potato Soup that evokes memories of family gatherings and chilly evenings, topped with crispy bacon, cheddar cheese, and green onions.

Ingredients

Scale
  • 4 medium Potatoes (Russet or Yukon Gold)
  • 4 slices Bacon
  • 1 cup Cheddar Cheese, shredded
  • 1/2 cup Sour Cream
  • 2 Green Onions, chopped
  • 4 cups Chicken or Vegetable Broth
  • 2 tablespoons Butter
  • 2 cloves Garlic, minced
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prepare the Ingredients: Wash and peel the potatoes, then dice them into 1-inch cubes.
  2. Cook the Bacon: In a large pot, cook the chopped bacon over medium heat until crispy, about 5-7 minutes.
  3. Sauté the Aromatics: In the same pot with the bacon fat, add butter, diced onion, and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
  4. Add the Potatoes and Broth: Add diced potatoes and pour in the broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until potatoes are tender.
  5. Mash and Creamify: Mash the potatoes slightly or blend for a smooth texture. Stir in sour cream, half of the bacon, and cheddar cheese.
  6. Season to Taste: Adjust soup with salt and pepper as needed.
  7. Serve and Garnish: Ladle soup into bowls and top with remaining bacon, cheddar cheese, sour cream, and green onions.

Notes

Consider adding diced jalapeños for a spicy kick or substitute bacon with smoked tempeh for a vegan version.
