Creamy Mango Sago

A delightful and simple dessert combining creamy coconut milk, sweet mangoes, and chewy sago pearls.

  • 1 cup sago or mini tapioca pearls
  • 6 cups water
  • 2 fresh mangos (preferably Australian mangoes)
  • ½ cup condensed milk
  • 1 cup full-fat coconut milk

Instructions

  1. Start by bringing 6 cups of water to a rolling boil in a medium saucepan. Once boiling, add the sago pearls and cook for about 20 minutes.
  2. Drain the cooked sago pearls into a fine mesh strainer and rinse under cold running water to stop the cooking process.
  3. Prepare the mangoes by peeling and chopping them; reserve some small chunks for garnish if desired.
  4. Make the cream base by combining the drained sago, condensed milk, and coconut milk in a large bowl, then fold in the mango.
  5. Chill the mixture by covering it with plastic wrap and placing it in the refrigerator for at least an hour.
  6. Serve the sago in bowls or cups, topping with reserved mango chunks and toasted coconut for garnish.

Notes

For a vegan version, substitute condensed milk with a coconut-based alternative. Adjust sweetness to your preference by adding a pinch of salt or citrus juice.
