Irresistible Mississippi Mud Potatoes

A warm, creamy, and delicious comfort dish perfect for cozy nights with friends.

  • 4 cups peeled and diced Russet or Yukon Gold potatoes
  • 2 cups sharp cheddar cheese
  • 1 cup mayonnaise
  • 1 cup cooked and crumbled bacon
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped (optional)
  • 1/2 cup sour cream
  • 2 tablespoons finely chopped chives
  • 2 tablespoons parsley

Instructions

  1. Prep your potatoes by peeling and dicing them into even-sized chunks.
  2. Place the diced potatoes in a large pot and cover them with cold water. Add salt and bring to a boil.
  3. Cook the potatoes for 15-20 minutes until fork-tender.
  4. While the potatoes are simmering, cook the bacon in a large skillet until crispy.
  5. Remove the bacon and let it drain on a paper towel, reserving some bacon fat in the skillet.
  6. Add the chopped onion to the skillet and sauté until translucent, then toss in the minced garlic.
  7. Drain the cooked potatoes and return them to the pot.
  8. Add mayonnaise, sour cream, half of the cheddar cheese, crumbled bacon, sautéed onions, and garlic.
  9. Stir everything together gently.
  10. Season with salt, pepper, and half of the chives, then transfer to a greased baking dish.
  11. Top with the remaining cheese and reserved bacon.
  12. Bake at 350°F (175°C) for 25-30 minutes until golden brown and bubbly.
  13. Let it cool for 5-10 minutes before serving.
