Creamy Mushroom Soup

A warm, comforting bowl of creamy mushroom soup that blends earthy flavors with a velvety texture.

  • 8 oz cremini mushrooms, sliced
  • 8 oz button mushrooms, sliced
  • 1 yellow onion, chopped
  • 2 cups heavy cream (or half-and-half)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 2 cloves garlic, minced (optional)
  • 4 cups vegetable or chicken broth
  • Salt and pepper to taste
  • 2 tablespoons butter or olive oil

Instructions

  1. Rinse the mushrooms under cold water and pat dry.
  2. Slice the mushrooms thinly, about ¼-inch thick.
  3. Turn on the stovetop to medium heat and add butter or olive oil to a large pot.
  4. Toss in the sliced onions and a pinch of salt; sauté for about 5 minutes.
  5. Add the sliced mushrooms to the pot, cooking for 10-12 minutes until browned.
  6. Stir in minced garlic and thyme; let flavors meld for about a minute.
  7. Pour in the broth and bring to a gentle simmer for 15-20 minutes.
  8. Remove from heat and stir in the heavy cream for a creamy texture.
  9. Taste and adjust seasoning with salt and pepper.
  10. Ladle the soup into bowls, garnish as desired, and serve.
