Broccoli Cheddar Soup

Ingredients

  • 1 cup carrots, diced
  • 1 cup aged cheddar cheese, grated
  • 1 cup heavy cream
  • 4 cups vegetable or chicken broth
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prep the vegetables: Wash and cut the broccoli into bite-sized florets, dice the carrots, chop the onions, and mince the garlic.
  2. Sauté the aromatics: In a large pot, heat olive oil over medium heat, add onions and garlic, and sauté until translucent.
  3. Add the carrots and broccoli, stirring occasionally, and cook until they start to soften.
  4. Pour in the broth, bring to a light boil, then reduce heat and let it simmer until veggies are tender.
  5. Blend the soup until smooth using an immersion blender or countertop blender.
  6. Incorporate the cream and cheese, stirring until the cheese melts and the soup is creamy.
  7. Season to taste with salt, pepper, or lemon juice.
  8. Serve hot in bowls, optionally topped with extra cheese or croutons.
