Tuscan White Bean Soup

A cozy bowl of Tuscan White Bean Soup that’s packed with flavors and perfect for any occasion.

Ingredients

  • 1 cup of white beans (cannellini, navy, or great northern)
  • 2 cups of fresh spinach
  • 2 cups of fresh tomatoes (or canned diced tomatoes)
  • 3 cloves of garlic, minced
  • 1 onion, chopped
  • 4 cups of vegetable broth
  • 1 teaspoon of fresh rosemary, chopped
  • 1 teaspoon of dried thyme
  • 2 tablespoons of olive oil
  • Salt & pepper to taste

Instructions

  1. Prep the beans: If using dried white beans, soak them overnight and cook until tender. If using canned, drain and rinse.
  2. Sauté the aromatics: In a pot, heat olive oil over medium heat. Add onion and garlic; cook until onion is translucent.
  3. Mix in the tomatoes: Add chopped tomatoes and cook for 2-3 minutes to develop flavors.
  4. Add the broth: Pour in vegetable broth and bring to a gentle simmer.
  5. Stir in the beans: Add your beans, salt, pepper, and herbs; season to taste.
  6. Let it simmer: Simmer for 15-20 minutes to meld flavors.
  7. Add the spinach: Stir in fresh spinach just before serving.
  8. Serve it up: Taste and adjust seasoning; enjoy your soup!

Notes

Drizzle some olive oil before serving and pair with crusty bread for a complete meal.
