Pumpkin Sausage Soup

  • 1 lb Italian sausage (spicy or sweet)
  • 15 oz pumpkin puree (100% pure)
  • 1 tablespoon fresh sage (or 1 teaspoon dried)
  • 4 cups chicken broth (or vegetable broth)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Brown the sausage: In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the Italian sausage and cook until browned, about 6-8 minutes.
  2. Sauté the aromatics: Add the chopped onion and minced garlic, cooking for 3-4 minutes until translucent.
  3. Add the pumpkin: Stir in the pumpkin puree and mix well with the sausage and onions. Warm through for 2 minutes.
  4. Pour in the broth: Gradually add in 4 cups of broth while stirring. Bring to a gentle simmer.
  5. Season with sage: Stir in sage, salt, and pepper, and let simmer for 15-20 minutes.
  6. Blend for creaminess (optional): Use an immersion blender to puree part of the soup, if desired.
  7. Taste for seasoning: Adjust salt, pepper, or add cream for richness as needed.

Notes

This soup can be made vegetarian by omitting the sausage and adding beans or lentils for protein. Perfectly pairs with crusty bread or grilled cheese.
