Roasted Cauliflower Soup

A creamy and comforting Roasted Cauliflower Soup, perfect for chilly nights and easy lunches.

Ingredients

  • 1 large head of cauliflower
  • 1 medium onion
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or coconut cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Remove the greens from the cauliflower and cut it into bite-sized florets. Place on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat evenly.
  3. Roast for 25-30 minutes, or until the edges are golden brown and crispy.
  4. Sauté the diced onion in a large soup pot over medium heat with a bit of olive oil and a pinch of salt for about 5-7 minutes until soft and translucent.
  5. Add the roasted cauliflower to the pot with the onions. Pour in the broth and bring to a simmer.
  6. Blend the mixture until smooth and creamy using an immersion blender or regular blender.
  7. Stir in the heavy cream (or coconut cream) and season with salt and pepper to taste. Heat through without boiling.

Notes

For serving, drizzle additional cream on top and sprinkle with fresh herbs. Paired excellently with crusty bread.
