Creamy Smothered Chicken and Rice

A comforting classic dish featuring tender chicken, creamy sauce, and fluffy rice, perfect for weeknight dinners.

  • 4 boneless, skinless chicken breasts
  • 1 cup white rice
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened, then add the minced garlic and sauté for another minute.
  3. Season the chicken breasts with salt, pepper, paprika, garlic powder, and onion powder. Push the onions to the side and sear the chicken in the skillet for about 5 minutes on each side until golden brown.
  4. Mix together cream of chicken soup, chicken broth, and sour cream in a medium bowl until combined.
  5. Pour the creamy mixture over the chicken, ensuring it’s covered.
  6. Sprinkle the uncooked rice over the chicken and sauce, pressing it gently.
  7. Bake covered with aluminum foil for 25-30 minutes, then remove the foil for the last 10 minutes.
  8. Let it rest for 5 minutes before serving.

Notes

You can easily modify this recipe based on personal preferences, using tofu for a plant-based version or adding vegetables to the dish.
