Creamy Spinach Chicken Soup

A warm and comforting soup featuring tender chicken, vibrant spinach, and a creamy finish.

Ingredients

  • Chicken (boneless, skinless breasts or thighs)
  • Fresh Spinach (about 4 cups)
  • Heavy Cream (1 cup)
  • Parmesan Cheese (1 cup, grated)
  • Onion (1 medium, diced)
  • Garlic (3 cloves, minced)
  • Chicken Broth (4 cups)
  • Olive Oil (2 tablespoons)
  • Salt and Pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 4-5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high and add in the chicken. Season with salt and pepper. Cook for around 5-7 minutes until the chicken is no longer pink on the outside.
  4. Pour in the chicken broth, bringing it to a gentle boil. Break apart the chicken into bite-sized pieces.
  5. Toss in the fresh spinach and stir until wilted, about 2 minutes.
  6. Reduce the heat to low and slowly stir in the heavy cream and grated parmesan cheese until melted. Adjust seasoning if needed.
  7. Ladle the soup into bowls and garnish with extra parmesan and freshly cracked black pepper.

Notes

Serve with crusty bread for dipping. Can be made ahead for even better flavor.
