  • Fresh Tortellini (refrigerated or frozen)
  • 4 cups Fresh Spinach
  • 1 cup Tomato Cream Sauce
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic (minced)
  • Salt & Pepper (to taste)
  • Grated Parmesan Cheese (for garnish)

Instructions

  1. Sauté the garlic in olive oil over medium heat until fragrant, about 1 minute.
  2. Add the fresh spinach and stir until wilted, around 3-4 minutes.
  3. Incorporate the tomato cream sauce and let it simmer for about 5 minutes.
  4. Cook the tortellini according to package instructions, then add to the sauce.
  5. Season with salt, pepper, and Parmesan cheese to taste.
  6. Plate and serve, garnished with more Parmesan and fresh basil if desired.

Notes

For a complete meal, pair with a salad and garlic bread. This dish can also be made ahead of time for convenience.
