Sweet Potato Soup

A comforting Sweet Potato Soup that embodies warmth and flavor, perfect for chilly nights and shared moments.

  • 2 Sweet Potatoes, peeled and chopped
  • 1 Onion, diced
  • 4 cups Broth (vegetable or chicken)
  • 1 teaspoon Cinnamon
  • 2 tablespoons Olive Oil or Butter
  • Salt and Pepper, to taste
  • Optional Garnishes: fresh herbs, pumpkin seeds

Instructions

  1. Prep Your Ingredients: Start by peeling and chopping your sweet potatoes into small chunks. Aim for about 1-inch pieces. Dice the onion too!
  2. Sauté the Onion: In a large pot, heat olive oil or butter over medium heat. Add in the diced onions and cook until translucent, about 5-7 minutes.
  3. Add the Sweet Potatoes: Toss in the chopped sweet potatoes and stir everything together for a few minutes.
  4. Pour the Broth: Add enough broth to cover the sweet potatoes. Bring to a boil, then reduce to low, cover, and simmer until tender, about 15-20 minutes.
  5. Spice it Up: Stir in the cinnamon, and adjust seasoning to taste.
  6. Blend it Smooth: Using an immersion blender, puree the soup until silky smooth.
  7. Taste-Test: Adjust seasoning as needed before serving.
  8. Serve Warm: Ladle the soup into bowls and garnish as desired.

Notes

This soup can be frozen for up to 3 months. Feel free to experiment with spices or additional vegetables.
