Creamy Tomato Tortellini Soup

A comforting and flavorful soup made with tortellini, rich tomatoes, and cream, perfect for chilly days.

Ingredients

Scale
  • 9 oz tortellini (fresh or frozen)
  • 28 oz canned tomatoes (whole or crushed)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 4 cups vegetable or chicken broth
  • Fresh basil, chopped
  • Salt and pepper, to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add onion and garlic, cooking until fragrant and translucent, about 5 minutes.
  2. Add the tomatoes: Pour in the canned tomatoes with their juices and let simmer for 10 minutes.
  3. Pour in the broth: Add the vegetable or chicken broth, stir, and bring to a gentle boil.
  4. Tortellini time: Toss in the tortellini and cook according to package directions (about 5–7 minutes).
  5. Add the cream: Reduce the heat and stir in the heavy cream, turning the soup a lovely pink hue.
  6. Season and serve: Add salt and pepper to taste, add basil just before serving.

Notes

For a smoother soup, blend a portion before adding tortellini. Great for make-ahead meals; just add tortellini before serving.
