White Chicken Chili

A comforting bowl of white chicken chili packed with flavor and perfect for chilly evenings.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon chili powder
  • 2 cans (15 oz) white beans, rinsed and drained
  • 3 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 can (4 oz) diced green chilies
  • 1 cup corn, frozen or canned
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large pot or Dutch oven over medium heat.
  2. Sauté the diced onion for about 5 minutes until translucent, then add the minced garlic and cook for 30 seconds.
  3. Sprinkle the cumin and chili powder into the pot and toast for about a minute.
  4. Add the rinsed white beans and chicken broth, stirring until well combined.
  5. In goes the shredded chicken and diced green chilies; bring to a gentle simmer for 15-20 minutes.
  6. Stir in the corn about 5 minutes before serving, and season with salt and pepper to taste.
  7. Serve the chili in bowls, garnished with your favorite toppings.

Notes

Top with sour cream, fresh cilantro, or crushed tortilla chips for added flavor and texture.
