This easy focaccia bread recipe yields a light and fluffy interior with a crispy crust, making it perfect for any meal or enjoyed on its own.

  • 4 cups (512 g) all-purpose flour or bread flour
  • 2 to 3 teaspoons (10 to 15 g) kosher salt
  • 2 teaspoons (8 g) instant yeast
  • 2 cups (455 g) lukewarm water
  • Butter for greasing
  • 4 tablespoons olive oil, divided
  • Flaky sea salt, such as Maldon
  • 1 to 2 teaspoons whole rosemary leaves (optional)

Instructions

  1. Mix the dough by combining flour and salt, adding instant yeast, and pouring in lukewarm water until a shaggy dough forms.
  2. Let it rise in a warm spot for 1 to 2 hours until doubled in size.
  3. Prepare a baking sheet by greasing it with butter and pouring in 2 tablespoons of olive oil.
  4. Shape the dough in the greased pan, drizzling remaining olive oil and dimpling the surface.
  5. Cover the dough again and let it rest for about 30 minutes for a second rise.
  6. Preheat your oven to 425°F (220°C) and sprinkle the dough with flaky sea salt and rosemary.
  7. Bake for 20-25 minutes until golden brown and hollow sounding when tapped.
  8. Cool on a wire rack for 5-10 minutes before slicing and serving.

Notes
