Garlic Parmesan Zucchini & Squash

A vibrant side dish featuring sautéed zucchini and yellow squash, infused with garlic and topped with parmesan cheese.

  • 2 Medium Zucchinis, sliced into half-moons
  • 2 Medium Yellow Squash, sliced into half-moons
  • 3 Tablespoons Olive Oil
  • 3 Cloves Garlic, minced
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper
  • 1/2 Cup Parmesan Cheese, grated
  • 2 Tablespoons Fresh Parsley, chopped

Instructions

  1. Prepare your vegetables by washing and slicing them into half-moons.
  2. Heat the olive oil in a large skillet over medium heat until shimmering.
  3. Sauté the minced garlic for about 30 seconds until fragrant.
  4. Add the sliced zucchinis and yellow squash to the skillet, stirring gently.
  5. Season with salt and black pepper, then cook for about 5-7 minutes until tender.
  6. Add the grated parmesan, allowing it to melt with residual heat.
  7. Garnish with chopped parsley before serving.

Notes

Feel free to substitute with other summer squash varieties or adjust seasonings to taste.
