Oven Baked Yellow Squash Fritters

Delicious oven baked yellow squash fritters are easy to make and packed with flavor.

Ingredients

  • 2 medium yellow squashes
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Olive oil spray

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the yellow squashes and trim off the ends. Grate them using a box grater or food processor.
  3. Remove excess moisture by placing the grated squash in a clean kitchen towel and squeezing out moisture.
  4. Combine the grated squash, breadcrumbs, Parmesan cheese, egg, salt, pepper, garlic powder, and onion powder in a large mixing bowl.
  5. Scoop about 2 tablespoons of the mixture and form it into a patty. Repeat until all fritters are formed.
  6. Line a baking sheet with parchment paper, lightly spray with olive oil.
  7. Arrange the fritters on the prepared baking sheet with space in between. Spray the tops with olive oil.
  8. Bake for about 25-30 minutes, flipping halfway through.
  9. Let them cool for a few minutes before serving.

Notes

Serve with dipping sauces like ranch or sriracha mayo. Fritters can be frozen after baking.
