Ultimate Zucchini Fritters

Crispy on the outside and cheesy on the inside, these zucchini fritters are a delicious way to incorporate veggies into your meals.

  • 2 medium zucchini, grated
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup Mozzarella cheese, shredded
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying

Instructions

  1. Prep the zucchini: Wash and grate the zucchinis, sprinkle with salt, and let sit for 10-15 minutes. Squeeze out excess moisture.
  2. Combine the ingredients: In a mixing bowl, add grated zucchini, cheeses, flour, beaten egg, garlic powder, salt, and pepper. Mix until just combined.
  3. Heat the oil: Heat a few tablespoons of oil in a frying pan over medium heat, ensuring the bottom is coated.
  4. Form the fritters: Scoop about a tablespoon of mixture per fritter and shape into patties.
  5. Fry and flip: Cook fritters for about 3-4 minutes on each side until golden brown.
  6. Drain and crisp up: Place cooked fritters on a paper towel-lined plate to absorb excess oil.
  7. Taste test: Enjoy warm, preferably with a dip.

Notes

These fritters can be made ahead of time and stored in the fridge for up to 24 hours. Freeze for longer storage.
