Fluffy Vanilla Cupcakes with Buttercream Frosting

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 2 ½ tsp baking powder
  • 1 tsp vanilla extract
  • 1 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 1 tbsp vanilla extract (for frosting)
  • 24 tbsp heavy cream or milk (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners.
  2. Cream together the softened butter and sugar until light and fluffy, about 2-3 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and milk.
  3. Whisk together flour and baking powder in a separate bowl.
  4. Gradually add the dry ingredients to the wet mixture and mix until combined.
  5. Spoon the batter into the lined cupcake tray, filling each about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  7. Remove cupcakes from the oven and let cool in the pan for 5 minutes. Transfer to a wire rack to cool completely.
  8. Beat the softened butter for frosting until creamy, then gradually add powdered sugar. Mix in 2 tablespoons of cream and vanilla until fluffy.
  9. Frost the cooled cupcakes and decorate as desired.
