Homemade Curry Puffs

Golden, crispy pastries filled with spicy chicken and savory potatoes, embodying the rich culinary traditions of Southeast Asia.

  • 15 dried red chilies (seeded)
  • 8 shallots (peeled)
  • 23 tablespoons meat curry powder
  • 5 tablespoons oil
  • 5 curry leaves
  • 1 kg chicken (preferably breasts, cut into small pieces)
  • 1 kg potatoes (cut into small pieces)
  • 500 g yellow onions (peeled and diced)
  • 125 ml water
  • 1.5 teaspoons salt
  • 330 ml water (for dough)
  • 900 g all-purpose flour
  • 340 g unsalted butter
  • 20 g ghee (optional)
  • 730 g flour (for dusting)

Instructions

  1. Prep Your Ingredients: Seed the dried red chilies, peel the shallots, and chop your chicken and potatoes.
  2. Heat it up: In a large pan, heat 5 tablespoons of oil over medium heat. Add the diced yellow onions and shallots, sautéing until they’re translucent and fragrant—about 5 minutes.
  3. Add spices: Toss in the seeded red chilies and curry powder. Cook for another couple of minutes.
  4. Chicken time: Add the chicken pieces and season with 1.5 teaspoons of salt.
  5. Toss in the diced potatoes and curry leaves, stirring together. Pour in 125 ml of water and cover the pan. Let it simmer for 15 minutes.
  6. Set aside the filling to cool slightly.
  7. Combine dry ingredients: In a large bowl, mix 900 g of all-purpose flour and a pinch of salt.
  8. Butter up: Cut the butter into cubes and mix until it looks like coarse crumbs.
  9. Hydrate the dough: Gradually add 335 ml of water, mixing until the dough starts to form a ball.
  10. Knead the dough on a floured surface for 5-7 minutes until smooth. Cover and let rest for 30 minutes.
  11. Roll out the dough: Split into portions and roll it until thin, about 1/8 inch thick.
  12. Cut circles of dough, about 4-6 inches in diameter.
  13. Fill each circle with a tablespoon of cooled filling.
  14. Seal edges and crimp with a fork.
  15. Fry in hot oil at 350°F (175°C) for 3-5 minutes per side until golden brown.
  16. Drain excess oil and serve.

Notes

Serve with a side of tangy dipping sauce or yogurt dip. These puffs can be frozen and cooked from frozen.
