Delicious Blueberry Pie Bars

A nostalgic and delightful dessert featuring warm blueberry filling atop a buttery, crumbly crust.

  • 1.5 cups all-purpose flour
  • 0.75 cups sugar
  • A pinch of salt
  • 1.5 sticks chilled butter (cubed)
  • 2 large eggs
  • 1 cup sugar
  • 0.5 cups sour cream
  • 0.33 cups all-purpose flour
  • A pinch of salt
  • 3 cups fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13-inch baking dish by greasing it or lining it with parchment paper.
  3. In a large bowl, combine the flour, sugar, and salt. Add the cubed butter and mix until it resembles coarse crumbs.
  4. Press about two-thirds of the crust mixture firmly into the bottom of your prepared dish.
  5. Bake the crust in the preheated oven for about 15-20 minutes until lightly golden.
  6. In a separate bowl, whisk together the eggs, sugar, sour cream, flour, and salt until well combined. Gently fold in the fresh blueberries.
  7. Once your crust is out of the oven, pour the blueberry filling over the baked crust.
  8. Use the remaining crust mixture to crumble over the top of the filling.
  9. Return the dish to the oven and bake for an additional 25-30 minutes.
  10. Let the bars cool in the pan for at least 30 minutes before slicing.

Notes

These bars can be served with a dust of powdered sugar, whipped cream, or a scoop of vanilla ice cream for added indulgence.
