  • 2 ribeye steaks
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound potatoes, peeled and diced
  • 4 tablespoons butter
  • 1/2 cup milk
  • 1 pound asparagus, trimmed
  • Lemon juice (optional)

Instructions

  1. Prep your ingredients: Gather all your ingredients and have them ready.
  2. Season the steaks: Rub both sides of the ribeye steaks generously with salt and pepper. Let them rest at room temperature for 20-30 minutes.
  3. Boil the potatoes: In a large pot, bring salted water to a boil. Cook the diced potatoes until fork-tender, about 15-20 minutes. Drain and return them to the pot.
  4. Mash the potatoes: Add butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and keep warm.
  5. Cook the steaks: Heat the olive oil in a large skillet over high heat. Add the steaks and sear for 4-5 minutes on each side for medium-rare. Add the minced garlic in the last minute of cooking.
  6. Let it rest: Transfer the steaks to a plate and tent with foil. Let them rest for at least 5 minutes.
  7. Sauté the asparagus: In the same skillet, add more olive oil, and toss in the asparagus. Sauté for 3-4 minutes until just tender. Add lemon juice if desired.
  8. Plate up: Serve the steak alongside mashed potatoes and sautéed asparagus. Drizzle pan juices over the top.

Notes

For added flavor, consider marinating the steaks or trying different potato varieties for the mash.
