Easy Jalapeño Popper Cauliflower Casserole

A creamy, cheesy twist on classic jalapeño poppers, this casserole is a flavorful comfort dish that’s low-carb and loaded with veggies.

  • 1 Head Cauliflower, Chopped
  • 4 oz Cream Cheese, Softened
  • 1 Cup Shredded Cheddar Cheese
  • 1/2 Cup Sour Cream
  • 1/2 Cup Diced Jalapeños (Fresh or Pickled)
  • 1/2 Cup Green Onions, Chopped
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • Salt and Pepper to Taste
  • 1/2 Cup Breadcrumbs (Optional for Topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Chop the cauliflower into bite-sized florets.
  3. Steam the cauliflower for about 5-7 minutes until tender yet crisp.
  4. Mix the cream cheese, sour cream, garlic powder, onion powder, salt, and pepper until smooth.
  5. Add the cheddar and jalapeños to the mixture and fold in.
  6. Combine the steamed cauliflower into the creamy mixture until evenly coated.
  7. Pour the mixture into a greased 9×13-inch baking dish.
  8. Top with breadcrumbs if desired.
  9. Bake for about 25-30 minutes until golden and bubbly.
  10. Let it cool for 5-10 minutes before serving.

Notes

For a crunchier topping, mix breadcrumbs with melted butter before sprinkling. You can prep the casserole ahead of time and refrigerate.
