Easy Middle Eastern Tomato Salad

A refreshing and flavorful tomato salad that embodies the essence of summer with fresh ingredients and a touch of Middle Eastern flair.

Ingredients

  • 4 cups ripe tomatoes, chopped
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Chop the vegetables into bite-sized pieces.
  2. Prepare the cucumber and onion, then mix them in a large bowl.
  3. Add fresh herbs to the bowl.
  4. Create the dressing by whisking together olive oil, lemon juice, salt, and pepper.
  5. Combine everything by pouring the dressing over the salad.
