Easy Strawberry Crunch Cookies

  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup crushed strawberries (fresh or freeze-dried)
  • 1 cup crushed cereal (like Rice Krispies)
  • 1/2 cup white chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs, one at a time, beating well after each addition, then mix in the vanilla extract.
  4. Combine the flour, baking soda, and salt in a separate bowl, then gradually add to the wet mixture.
  5. Fold in the crushed strawberries and cereal until evenly distributed.
  6. Scoop cookie dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes.
  7. Cool the cookies on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to a week. Dough can be refrigerated for a few days or frozen for a couple of months.
