Pumpkin Cream Cheese Muffins

  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • ¼ cup brown sugar (for the cream cheese filling)
  • 1 tsp vanilla extract (for the cream cheese filling)
  • ½ cup flour (for the cream cheese filling)
  • 1 tsp ground cinnamon (for the cream cheese filling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the muffin tins.
  3. Mix the dry ingredients together in a large bowl.
  4. Mix the wet ingredients in another bowl until well combined.
  5. Combine the mixtures gently until just combined.
  6. Prepare the cream cheese mixture until smooth.
  7. Assemble the muffins by filling the liners and adding the cream cheese filling.
  8. Bake for 18-20 minutes.
  9. Cool in the tin for about 5 minutes before transferring to a wire rack.
  10. Enjoy warm or later!
