French Lemon Cream Tart

A luscious dessert featuring a crumbly sweet crust and a tangy, silky lemon filling.

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 1/4 cup heavy cream
  • 1 cup lemon juice
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tablespoon lemon zest

Instructions

  1. Combine the all-purpose flour, powdered sugar, and salt in a mixing bowl.
  2. Rub the softened butter into the dry mix until it resembles coarse crumbs.
  3. Add the egg yolk and heavy cream, stirring until just combined.
  4. Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  5. Preheat the oven to 350°F (175°C).
  6. Roll out the chilled dough to about 1/8 inch thick and transfer it to a tart pan.
  7. Poke holes in the bottom and bake for about 20 minutes until lightly golden.
  8. Whisk the lemon juice and zest with the granulated sugar in a mixing bowl until dissolved.
  9. Add the eggs and whisk until fully combined.
  10. Whisk in the heavy cream until smooth.
  11. Pour the filling into the baked crust and bake for another 20-25 minutes until set with a slight jiggle.
  12. Cool the tart at room temperature, then refrigerate for at least two hours before serving.

Notes

Dust with powdered sugar before serving and garnish with fresh berries or mint leaves.
